Praising Porotos!

“Porotos granados" is a typical “country” dish in Chile. It is warm and filling, served mostly in summertime. Porotos granados are cranberry beans with corn and squash. The origins of this dish reaches back into pre-Hispanic times. The basic ingredients are all indigenous to the Americas. This dish is often served with a simple ensalada Chileña of tomatoes, chopped cilantro and sliced onion tossed with a simple vinaigrette.
